Ruam Mit (Thai Mixed Fruit in Coconut Milk)
A refreshing Thai dessert of water chestnuts, jackfruit, and taro in sweet coconut milk over crushed ice.

Ingredients
- 120 ml coconut milk
- 2 tbsp palm sugar
- ⅛ tsp salt
- 60 ml diced water chestnuts
- 30 g jackfruit strips
- 30 g diced taro, cooked
- 30 g crushed ice
- 1 tbsp red-dyed water chestnut pieces (optional)
Steps
- Cook diced taro until tender and set aside to cool.
- Toss water chestnut pieces in red food coloring if desired, then let dry slightly.
- In a small saucepan, warm coconut milk with palm sugar and salt until sugar dissolves; do not boil. Let cool.
- In a serving bowl or cup, layer the taro, jackfruit, and water chestnuts.
- Add crushed ice on top of the fruit mixture.
- Pour the sweetened coconut milk over the ice and fruits.
- Stir gently and serve immediately while cold.
