Thai Omelette (Khai Jiao)
A crispy-edged, fluffy Thai-style omelette deep-fried to golden perfection and served with a savory-spicy dipping sauce.

Ingredients
- 2 eggs
- 1 tablespoon fish sauce
- ¼ teaspoon white pepper
- 3 tablespoons vegetable oil
- 1 stalk green onion, chopped
- 1 tablespoon soy sauce
- 1 teaspoon sriracha or chili sauce
- 1 tablespoon rice, cooked (for serving)
Steps
- Crack eggs into a bowl and add fish sauce and white pepper.
- Beat the eggs vigorously until frothy and well combined.
- Stir in chopped green onion.
- Heat oil in a small pan or wok until very hot and shimmering.
- Pour the egg mixture into the hot oil all at once, letting the edges puff and crisp.
- Fry for about 1-2 minutes, then carefully flip and cook the other side until golden brown.
- Remove and drain excess oil on a paper towel.
- Serve hot over steamed rice with soy sauce and sriracha on the side.
