Chinese Scallion Pancake with Soy Milk
Crispy, flaky scallion pancakes paired with warm soy milk for a classic Chinese breakfast.

Ingredients
- 120 g all-purpose flour
- 80 ml hot water
- 2 tbsp scallions, chopped
- 1 tbsp vegetable oil
- ½ tsp salt
- 240 ml soy milk
- 1 tsp sesame oil
Steps
- Mix the flour with hot water into a shaggy dough, knead until smooth and rest 15 minutes.
- Roll the dough into a thin rectangle.
- Brush it with the vegetable and sesame oil, then sprinkle with salt and scallions.
- Roll it up into a log, coil the log into a spiral and flatten it into a round pancake.
- Pan-fry in a lightly oiled skillet over medium heat 2-3 minutes per side until golden and crisp.
- Slice into wedges and serve hot with a cup of warm soy milk.
