5 Minute Egg Paratha

Ingredients
- 1 whole wheat paratha (plain, uncooked)
- 2 eggs
- 1 tablespoon chopped onion
- 1 tablespoon chopped green chili
- 1 tablespoon chopped coriander leaves
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon red chili powder
- 1 tablespoon oil or butter
Steps
- Heat a tawa or non-stick pan over medium heat and lightly cook the paratha on both sides until half done.
- In a bowl, whisk the eggs with onion, green chili, coriander, salt, pepper, and red chili powder.
- Pour the egg mixture onto the pan and place the half-cooked paratha on top of the egg layer.
- Let the egg set for a minute, then flip the paratha so the egg side cooks and sticks to the bread.
- Drizzle a little oil or butter around the edges and cook both sides until golden and crisp.
- Fold or slice into wedges and serve hot.
