Rava Kesari Halwa
A quick, glossy semolina halwa infused with saffron, cardamom, and ghee for a rich Indian dessert.

Ingredients
- 30 g rava (semolina)
- 3 tbsp ghee
- 65 g sugar
- 180 ml water
- 2 tbsp cashews
- 1 tbsp raisins
- 2 pinches saffron strands
- ¼ tsp cardamom powder
Steps
- Heat 1 tbsp ghee in a pan and roast the cashews and raisins until golden; set aside.
- In the same pan, add remaining ghee and roast the rava on low flame until fragrant, about 3-4 minutes.
- In a separate pot, boil water with saffron strands.
- Slowly pour the hot saffron water into the roasted rava, stirring continuously to avoid lumps.
- Cook until the rava absorbs the water and thickens slightly.
- Add sugar and mix well, cooking until the mixture thickens and starts to leave the sides of the pan.
- Stir in cardamom powder and the roasted cashews and raisins.
- Serve warm.
