Mango Mochi
Chewy glutinous rice dough wrapped around sweet fresh mango and creamy filling for a delightful bite-sized treat.

Ingredients
- 40 g glutinous rice flour
- 2 tbsp sugar
- 80 ml water
- 1 tsp vegetable oil
- 30 g fresh mango, diced
- 1 tbsp cornstarch (for dusting)
- 1 tbsp whipped cream or sweetened condensed milk (optional)
Steps
- Mix glutinous rice flour, sugar, and water in a microwave-safe bowl until smooth.
- Microwave the mixture for 1-2 minutes, stirring halfway, until it becomes translucent and sticky dough forms.
- Stir in vegetable oil and let the dough cool slightly.
- Dust a clean surface with cornstarch and turn out the dough.
- Flatten the dough into a small disc and place a piece of mango (and cream if using) in the center.
- Fold the edges of the dough over the filling and pinch to seal, forming a smooth ball.
- Dust off excess cornstarch and chill mochi in the fridge for 10 minutes before serving.
