Air-Fryer Falafel
Herby green falafel made from soaked dried chickpeas, cumin and coriander — crisp outside, fluffy inside, air-fried with a little olive oil.

Ingredients
- 65 g dried chickpeas
- 1 tsp chickpea flour
- 4 g flat-leaf parsley
- 2 g mint leaves
- 20 g yellow onion
- 1 clove garlic
- ¼ tsp ground cumin
- ⅛ tsp ground coriander
- 0.2 tsp salt
- 1 pinch black pepper
- 1 pinch cayenne pepper
- ⅓ tsp baking powder
- 1 tsp extra virgin olive oil
Steps
- Soak the dried chickpeas overnight with a pinch of baking soda, then drain well.
- Pulse the chickpeas with onion, garlic, parsley, mint and spices into a coarse mix.
- Stir in the chickpea flour and baking powder and shape into small balls or patties.
- Brush with olive oil and air-fry at 200°C for 12–15 minutes, turning once, until golden.
