Thai Chicken Satay

Ingredients
- 150 g chicken breast, sliced into strips
- 1 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tsp curry powder
- ½ tbsp brown sugar
- 1 tbsp coconut milk
- 1 clove garlic, minced
- 2 wooden skewers, soaked in water
- 2 tbsp peanut butter
- 1 tsp lime juice
- 1 tsp soy sauce (for sauce)
- 1 tsp brown sugar (for sauce)
- 2 tbsp water
- 1 pinch chili flakes (optional)
Steps
- In a bowl, combine chicken strips with soy sauce, fish sauce, curry powder, brown sugar, coconut milk, and garlic; marinate for at least 15 minutes.
- Thread the marinated chicken onto soaked skewers.
- Grill or pan-sear the skewers over medium-high heat for 3-4 minutes per side until cooked through and lightly charred.
- Meanwhile, whisk together peanut butter, lime juice, soy sauce, brown sugar, water, and chili flakes to make the dipping sauce.
- Serve the hot chicken satay skewers with the peanut sauce on the side.
