Jigarthanda - Madurai Cold Drink
A creamy, chilled Madurai specialty made with almond gum, sarsaparilla syrup, milk, and a scoop of kulfi-like ice cream.

Ingredients
- 1 tsp badam pisin (edible gum/tragacanth)
- 240 ml full-fat milk
- 2 tbsp sugar
- 1 tbsp nannari (sarsaparilla) syrup
- 1 scoop vanilla or kulfi ice cream
- 1 tbsp fresh cream
- 5-6 strands saffron (optional)
- 1 tbsp chopped nuts for garnish
- Ice cubes as needed
Steps
- Soak the badam pisin in water for 3-4 hours until it swells into translucent jelly-like strands.
- Boil milk with sugar until slightly reduced and creamy, then chill completely.
- In a serving glass, add nannari syrup at the bottom.
- Add the soaked badam pisin (drained) over the syrup.
- Pour the chilled sweetened milk over it.
- Top with a scoop of ice cream and a dollop of fresh cream.
- Garnish with saffron strands and chopped nuts.
- Serve immediately with a spoon and straw while cold.
