Greek Turkey Meatballs with Orzo Salad
Herby baked turkey meatballs with a lemony orzo salad of cherry tomato, cucumber, red onion and feta — meal-prep friendly.

Ingredients
- 113 g lean ground turkey
- ¾ tsp olive oil
- ¼ egg
- 7 g bread crumbs
- 20 g red onion
- 1 clove garlic
- 1 ½ tsp parsley
- ¾ tsp dill
- ¼ tsp dried oregano
- 35 g orzo
- 28 g cherry tomatoes
- 25 g cucumber
- 7 g feta
- 1 ½ tsp lemon juice
- ¼ tsp dijon mustard
- 0.4 tsp honey
- ⅛ tsp garlic powder
- ½ tbsp olive oil
- 1 pinch salt
- 1 pinch black pepper
Steps
- Heat the oven to 200°C. Mix the turkey, olive oil, egg, bread crumbs, half the onion, garlic, herbs, salt and pepper; roll into 5 meatballs.
- Bake 15 minutes until golden and cooked through.
- Cook the orzo, drain and rinse with cold water.
- Whisk lemon juice, dijon, honey, garlic powder, salt and pepper, then whisk in the olive oil.
- Toss the orzo with tomatoes, cucumber, the rest of the onion, feta and the dressing; serve with the meatballs.
