Ground Turkey Veggie Skillet
Lean ground turkey and seasoned zucchini, bell pepper and onion simmered together in a light tomato sauce — a low-carb, one-pan dinner.

Ingredients
- 142 g lean ground turkey
- 1 pinch salt
- 1 pinch black pepper
- ⅛ tsp chilli powder
- ⅛ tsp dried oregano
- 1 pinch paprika
- ⅛ tsp onion powder
- 1 pinch dried basil
- 10 g yellow onion, chopped
- ¼ tsp minced garlic
- 50 g zucchini, quartered
- 38 g bell pepper, chopped into chunks
- 1 pinch garlic salt
- 1 pinch garlic powder
- 21 g tomato paste
- 30 ml water
- 1 drizzle olive oil
Steps
- Brown the ground turkey in a large skillet over medium-high heat, drain any excess liquid, stir in the salt, pepper, chilli powder, oregano, paprika, onion powder and basil, then set aside.
- Add a little olive oil to the pan and cook the onion and garlic for 3–4 minutes.
- Add the zucchini, bell pepper and the remaining seasonings and cook until the vegetables are as tender as you like.
- Return the turkey, lower the heat, stir in the tomato paste and water and simmer for about 5 minutes; season to taste and serve.
