Lentil Salad with Honey Dijon Dressing
Green lentils cooked in broth and tossed with cucumber, tomato, bell pepper, olives, parsley and mint in a lemony honey-Dijon dressing.

Ingredients
- 50 g dry green lentils, rinsed
- 180 ml vegetable broth (for cooking)
- 100 g English cucumber, finely diced
- 1 ½ vine tomatoes, diced
- ¼ yellow bell pepper, finely diced
- ¼ small red onion, finely diced
- 35 g pitted olives, halved
- 1 tbsp chopped Italian parsley
- 1 tbsp chopped fresh mint
- 1 tbsp extra virgin olive oil
- ¼ lemon, zest and juice
- ¾ tsp Dijon mustard
- ½ tsp honey
- ⅛ tsp garlic powder
- 1 pinch salt
- 1 pinch black pepper
Steps
- Rinse the lentils well, then simmer them in the broth for 15–20 minutes until tender; drain and let cool.
- Meanwhile, dice the vegetables and add them to a salad bowl with the olives and herbs.
- Whisk the olive oil, lemon zest and juice, Dijon, honey, garlic powder, salt and pepper.
- Add the cooled lentils to the bowl, drizzle with the dressing and toss.
