Salmon with Creamy Spinach & Sun-Dried Tomato Sauce

Ingredients
- 1 salmon fillet (6 oz)
- 1 tbsp olive oil
- 1 tsp butter
- 2 cloves garlic, minced
- 80 ml heavy cream
- 60 ml chicken broth
- 2 tbsp sun-dried tomatoes, chopped
- 30 g fresh spinach
- 2 tbsp parmesan cheese, grated
- ¼ tsp red pepper flakes
- Salt to taste
- Black pepper to taste
Steps
- Season salmon fillet with salt and pepper.
- Heat olive oil in a skillet over medium-high heat and sear salmon 4-5 minutes per side until golden and cooked through; remove and set aside.
- In the same skillet, melt butter and sauté garlic until fragrant.
- Add chicken broth and sun-dried tomatoes, simmer for 2 minutes.
- Stir in heavy cream and parmesan, simmer until sauce thickens slightly.
- Add spinach and cook until wilted, season with red pepper flakes, salt, and pepper.
- Return salmon to the skillet, spoon sauce over top, and serve warm.
