High-Protein Tofu Noodle Bowl
Crispy sticky soy-maple tofu over noodles with edamame, avocado, carrot and cucumber — plant-based and packed with protein.

Ingredients
- 60 g spelt noodles
- 175 g firm tofu
- 2 tsp corn flour
- 1 pinch black pepper
- 1 tsp oil
- 1 tbsp soy sauce
- ½ tbsp mirin
- 2 ½ tsp maple syrup
- 1 ½ tsp sesame seeds
- ¾ tsp water
- ½ carrot
- ½ cucumber
- ½ avocado
- 75 g edamame
- 1 green onion
Steps
- Cube the tofu and toss with 1.5 tsp corn flour and pepper.
- Cook the noodles as the package says; boil the edamame.
- Fry the tofu in the oil over high heat until golden all over.
- Mix soy sauce, mirin, maple syrup, sesame seeds, the rest of the corn flour and water; pour over the tofu and let it bubble until sticky.
- Serve the noodles with tofu, edamame, avocado, carrot, cucumber and green onion.
