Japchae (Korean Glass Noodles)
Chewy sweet-potato glass noodles stir-fried with beef, spinach, mushrooms and colourful veg in a sweet soy-sesame sauce.

Ingredients
- 55 g potato starch noodles
- 55 g beef
- 1 ½ dried shiitake mushrooms
- 45 g mushrooms
- 55 g spinach
- 55 g onion
- 30 g carrot
- 30 g bell pepper
- 1 ½ green onions
- 1 clove garlic
- 1 tbsp sugar
- 1 ½ tbsp soy sauce
- 1 tbsp toasted sesame oil
- 1 ½ tsp toasted sesame seeds
- 1 egg yolk
- 1 tsp neutral oil
- 1 pinch black pepper
- 1 pinch salt
Steps
- Soak the shiitake in hot water 30 minutes, slice, and marinate with the beef, garlic, a little sugar, soy sauce, sesame oil and pepper.
- Blanch the spinach 30 seconds, cool, squeeze and season with sesame oil and soy sauce.
- Cook the noodles, drain and toss with sesame oil, sugar and soy sauce.
- Stir-fry the onion and green onion, then the mushrooms, then the carrot and pepper, then the beef — each briefly.
- Fry the egg yolk into a thin sheet and cut into strips.
- Toss everything together with the remaining soy, sugar and sesame oil; finish with sesame seeds.
