Thai Chicken Lettuce Wraps
Ground chicken stir-fried with garlic, ginger, onion and crunchy water chestnuts in a hoisin and sweet chili sauce, spooned into butter lettuce cups.

Ingredients
- 150 g ground chicken
- 2 tsp cooking oil
- 1 ¼ garlic cloves, minced
- ¼ onion, diced
- 1 ⅓ tbsp hoisin sauce
- 2 tsp light soy sauce
- 2 tsp Thai sweet chili sauce
- 1 tsp grated ginger
- 75 ml canned water chestnuts, drained and diced
- ¾ green onion, chopped, plus extra to garnish
- 1 pinch salt
- 1 pinch black pepper
- ¼ lime, juiced
- ¼ head butter lettuce
- 1 pinch sesame seeds
Steps
- Heat the oil in a large pan over medium-high heat and brown the ground chicken for 3–5 minutes, breaking it up.
- Add the onion, garlic and ginger and sauté until soft and fragrant.
- Stir in the hoisin, soy and sweet chili sauces, then add the water chestnuts and green onion and cook until tender.
- Season with salt and pepper and drizzle with lime juice.
- Spoon into the lettuce cups and top with green onion and sesame seeds.
