Quick Beef Mince Curry
A fast weeknight curry of browned beef mince, tomato, warm spices and peas, spooned over steamed rice with fresh coriander.

Ingredients
- ¾ tsp olive oil
- 150 g beef (or lamb) mince
- ¼ red onion, chopped
- ½ tomato, chopped
- ½ clove garlic, minced
- ¼ tsp smoked paprika
- ¼ tsp ground coriander
- ¼ tsp ground cumin
- ¼ tsp garlic powder
- ¼ tsp garam masala
- 1 pinch dried chilli flakes
- 35 g frozen peas
- 30 ml water
- 150 g steamed rice
- 1 tbsp chopped coriander leaves
Steps
- Heat the oil in a saucepan over high heat, add the mince and leave it untouched for 2 minutes.
- Add the onion and break up the mince with a wooden spoon, cooking until well browned.
- Add the tomato and garlic and cook 2 minutes.
- Stir in the spices, lower the heat to medium, cover and cook 3–4 minutes.
- Stir in the peas and water, cover and cook 2 minutes more.
- Serve on steamed rice, scattered with coriander.
