Homemade Teriyaki Chicken
Boneless chicken thighs marinated and glazed in a quick homemade low-sugar teriyaki of soy, mirin, garlic and a splash of fish sauce.

Ingredients
- 113 g boneless skinless chicken thighs
- ½ garlic clove, finely minced
- 2 tsp soy sauce
- 1 tsp zero-calorie brown sugar
- 2 tsp mirin
- ½ tsp cornstarch
- 1 tsp cold water
- 0.17 tsp fish sauce
- ½ tsp avocado oil
- Fresh ginger, same amount as the garlic (optional)
Steps
- Simmer the garlic, soy sauce, sweetener, mirin and ginger (if using) for 3–4 minutes, then stir in the cornstarch mixed with the cold water until thickened.
- Toss the chicken with about a third of the teriyaki, the fish sauce and the avocado oil, reserving the rest for glazing.
- Marinate for 1–4 hours or overnight.
- Cook the chicken over high heat until a crust forms and it is cooked through, then glaze with the remaining teriyaki.
