Taiwanese Pork and Daikon Soup
A clear, comforting broth of slow-simmered pork ribs and tender daikon radish with ginger, garlic and white pepper, finished with fresh cilantro or scallion.

Ingredients
- 225 g pork ribs, chopped into 2–3 cm chunks
- 225 g daikon radish, cut into chunks
- 1 cm ginger, thinly sliced
- 2 ½ garlic cloves, peeled
- 1 litre water (enough to cover), plus extra for blanching
- 1 tsp salt, more to taste
- ½ tsp white pepper, more to taste
- 1 tbsp chopped cilantro or scallion, to garnish
Steps
- Cover the pork ribs with cold water in a pot, bring to a boil and blanch for a couple of minutes to remove impurities, then drain.
- Return the ribs to the pot with the daikon, ginger and garlic and add enough fresh water to fully submerge everything.
- Bring to a boil, then cover and simmer for about 45 minutes, or until the ribs are tender.
- Season with the salt and white pepper, adjusting to taste.
- Ladle into a bowl, garnish with cilantro or scallion and serve hot.
