High-Protein Kimchi Fried Rice
Kimchi fried rice bulked up with lean ground chicken, egg and melted low-fat cheese — 64 g protein a plate.

Ingredients
- 200 g lean ground chicken (98%)
- 140 g cooked white rice
- 75 g kimchi
- 25 g grated low-fat cheese
- 1 egg
- 15 g spring onion
- ½ tbsp gochujang
- ½ tbsp light soy sauce
- ½ tsp toasted sesame oil
- 1 pinch sesame seeds
Steps
- Brown the ground chicken in a hot pan, breaking it up.
- Add the chopped kimchi and cook 2 minutes.
- Stir in the rice, gochujang and soy sauce and fry until hot and slightly crisp.
- Push aside, scramble in the egg, then mix through with spring onion and sesame oil.
- Top with the cheese, cover until melted and finish with sesame seeds.
