Japanese Beef Curry
Beef sirloin, potato, carrot and onion simmered in bone broth with Japanese curry roux, served over rice with sesame and green onion.

Ingredients
- 115 g raw beef sirloin, diced
- ¼ medium yellow onion, diced
- ½ medium carrot, diced
- ½ Yukon gold potato, peeled and diced
- 240 ml chicken bone broth
- 1 ½ Japanese curry cubes
- ¾ tsp ketchup
- ¾ tsp black sesame seeds
- 140 g cooked rice
- ½ green onion, sliced
- 1 spray cooking oil
Steps
- Peel and dice the potato; dice the onion, carrot and beef and slice the green onion.
- Sauté the potato, onion, carrot and beef in a lightly oiled pan over medium heat until the beef is cooked.
- Add the broth, curry cubes and ketchup, stir well, cover and cook on medium-low for 2–3 minutes until the curry thickens.
- Serve with the rice, topped with sesame seeds and green onion.
