Cabbage Wraps with Tuna Ssamjang
Steamed cabbage leaves wrapped around rice and a spicy-savoury tuna, gochujang and doenjang sauté for one-bite Korean ssam.

Ingredients
- ½ tbsp olive oil
- ½ tbsp minced garlic
- ¼ green onion
- ¼ onion
- ¾ tsp gochugaru
- 35 g canned tuna, drained
- ¾ tsp gochujang
- ¾ tsp oligo syrup
- ¾ tsp doenjang
- ¼ head cabbage
- ¾ tsp sesame oil
- ¼ chili pepper
- 1 pinch sesame seeds
- 100 g cooked rice
Steps
- Separate the cabbage into leaves big enough to wrap a bite of rice, steam them for about 5 minutes and let cool.
- Finely chop the remaining cabbage including the core, and dice the onion, green onion and chili.
- Sauté the garlic, green onion, onion and chili in the olive oil until the onion turns translucent, then stir in the gochugaru over low heat.
- Add the tuna, gochujang, oligo syrup and doenjang and sauté together, then add the chopped cabbage and cook until softened.
- Take off the heat and finish with sesame oil and sesame seeds.
- Put some rice on a steamed leaf, top with the tuna mixture, wrap it up and eat in one bite.
