Stuffed Pepper Soup
All the flavours of stuffed peppers in a hearty one-pot soup — extra-lean beef, bell peppers, tomatoes, bone broth and rice, topped with melted cheddar.

Ingredients
- 130 g extra-lean ground beef (32 ¼)
- ½ bell pepper, diced
- 20 g white onion, diced
- ⅛ tsp salt
- ⅛ tsp black pepper
- ⅛ tsp Italian seasoning
- 1 tsp tomato paste
- 60 ml tomato sauce
- 115 g fire-roasted diced tomatoes, undrained
- 145 ml bone broth
- 25 g uncooked rice (e.g. jasmine)
- 28 g fat-free shredded cheddar
Steps
- Brown the ground beef in a large pan, seasoning with the salt, pepper and Italian seasoning.
- Add the diced onion and bell pepper and stir until combined.
- Once the beef is browned, stir in the tomato paste, tomato sauce, diced tomatoes, bone broth and uncooked rice.
- Cover and simmer for about 15 minutes, until the rice is fully cooked.
- Top with the cheddar and serve, or cool and store in the fridge or freezer.
