Oven-Grilled Spicy Whole Fish
A whole fish scored and rubbed with ginger-garlic paste, chilli, coriander, cumin, turmeric, garam masala and lemon, then baked and grilled until charred.

Ingredients
- ½ whole fish, cleaned (about 300 g)
- 1 tsp ginger garlic paste
- 1 tsp red chilli powder
- ½ tsp coriander powder
- ¼ tsp cumin powder
- ¼ tsp black pepper powder
- ¼ tsp turmeric powder
- ¼ tsp garam masala
- ⅜ tsp salt
- Juice of ¼ large lemon
- 1 tbsp water
- 1 tbsp oil, plus a little for the grill pan
Steps
- Pat the cleaned fish dry and cut 4–5 slits into both sides.
- Mix the ginger garlic paste and all the spices with the lemon juice and water into a thick paste.
- Rub the paste over both sides of the fish and into the slits, drizzle with a little oil and marinate for 30–60 minutes.
- Place on an oiled grill pan and bake at 180°C for 10 minutes, then switch to grill mode and cook for 15 minutes per side, brushing with a little oil when you flip.
- Serve hot with a fresh salad.
