Low-Calorie Cajun Chicken Pasta
Cajun-spiced chicken thighs over pasta in a spicy, creamy sauce made light with evaporated milk and Laughing Cow cheese, plus onion, chilli and green onion.

Ingredients
- 140 g chicken thighs
- 1 ½ tsp olive oil, divided
- ⅜ tsp salt
- ¼ tsp black pepper
- ½ tsp Cajun seasoning (chicken)
- ¼ tsp onion powder (chicken)
- ¼ tsp cayenne (chicken)
- ⅜ tsp garlic powder (chicken)
- ⅛ tsp dried thyme (chicken)
- 1 tsp Cajun seasoning (sauce)
- ½ tsp onion powder (sauce)
- ½ tsp cayenne (sauce)
- ¾ tsp garlic powder (sauce)
- ¼ tsp dried thyme (sauce)
- ½ tsp black pepper (sauce)
- ¼ tsp red pepper flakes
- ¼ onion, diced
- ½ chilli pepper, sliced
- ¼ bunch green onions, sliced
- 56 g dry pasta
- 1 ½ wedges Laughing Cow cheese (or 30 ml light cream cheese)
- 75 ml evaporated milk
Steps
- Toss the chicken with half the oil, the salt and the chicken spices, then air fry at 200°C for 12–14 minutes (or pan-sear) and slice.
- Cook the pasta in salted water, saving some pasta water.
- Cook the onion and chilli in the remaining oil until they take on colour, then add the green onions.
- Stir in the sauce spices, cheese wedges and evaporated milk until smooth and creamy.
- Toss in the pasta with enough pasta water for your preferred consistency, salt to taste and top with the chicken.
