Birria Tacos with Consommé
Crispy, cheese-crusted tortillas stuffed with tender braised beef and dipped in rich, chili-spiced consommé.

Ingredients
- 200 g beef chuck
- 3 corn tortillas
- 50 g shredded mozzarella or Oaxaca cheese
- 40 g diced white onion
- 1 tbsp chopped cilantro
- 2 dried guajillo chiles
- 1 dried ancho chile
- 1 clove garlic
- ¼ tsp cumin
- ¼ tsp dried oregano
- 240 ml beef broth
- 1 tbsp vegetable oil
- 1 lime wedge
Steps
- Toast dried chiles, then soak in hot water until softened.
- Blend soaked chiles with garlic, cumin, oregano, and beef broth into a smooth sauce.
- Simmer beef chuck in the chili sauce until tender, about 2-3 hours, then shred the meat.
- Reserve the flavorful cooking liquid as consommé for dipping.
- Dip tortillas in the consommé, then fill with shredded cheese and shredded birria meat.
- Fold tortillas and pan-fry in oil until crispy and cheese is melted.
- Top with diced onion and cilantro, serve with a lime wedge and a side of warm consommé for dipping.
