Crispy Air Fryer Fish Sandwich
A thick, crunchy panko-coated white fish fillet air-fried and stacked in a toasted brioche bun with light cheese, lettuce and a Greek yogurt tartar sauce.

Ingredients
- 104 g white fish fillet (e.g. halibut)
- 10 g all-purpose flour
- 3 g corn starch
- 17 g panko
- 17 g egg whites
- ½ tsp chili powder
- ½ tsp black pepper
- ½ tsp sea salt
- 1 brioche bun
- 1 slice reduced-fat American cheese
- Lettuce
- Cooking spray
- 17 g plain nonfat Greek yogurt (tartar sauce)
- 8 g light mayonnaise (tartar sauce)
- 10 ml dill relish (tartar sauce)
- 2 ml fresh parsley, chopped (tartar sauce)
- 2 ml yellow mustard (tartar sauce)
- ⅓ tsp dried dill (tartar sauce)
- 1 pinch each onion powder, red pepper flakes and black pepper (tartar sauce)
- 1 tsp lemon juice (tartar sauce)
- 1 pinch zero-calorie sweetener (optional, tartar sauce)
Steps
- Mix all the tartar sauce ingredients in a bowl until smooth.
- Blend the panko until fine, then set up three coating stations: flour with corn starch, egg whites, and panko, dividing the chili powder, pepper and salt between them.
- Coat the fish in the flour mix, then the egg whites, then the panko.
- Place in the air fryer, spray with cooking spray and air fry at 200 °C (400 °F) for 9–11 minutes until golden.
- Toast the bun and build the sandwich with tartar sauce, lettuce, the fish and the cheese.
