Ground Turkey Teriyaki Stir Fry
Ground turkey stir-fried with broccoli, carrot and red pepper in a homemade coconut-aminos teriyaki sauce, served over rice.

Ingredients
- 1 tsp avocado oil
- 115 g ground turkey (or chicken)
- 20 g onion, diced
- 1 clove garlic, minced
- 60 g broccoli florets
- ¼ red pepper, sliced
- 45 g carrot, thinly sliced
- 45 ml chicken bone broth
- 2 tbsp coconut aminos
- ¾ tsp coconut sugar
- ¾ tsp rice vinegar
- ½ tsp sesame oil
- ¾ tsp fresh ginger, grated
- ½ clove garlic, minced (for the sauce)
- 1 ½ tsp arrowroot starch
- 150 g cooked rice
- 1 green onion, sliced, to serve
Steps
- Heat the avocado oil in a large skillet or wok over medium-high heat.
- Add the onion and turkey and cook 3–4 minutes, breaking up the meat.
- Add the garlic, broccoli, carrot and red pepper and cook 3–4 minutes more until the turkey is no longer pink.
- Meanwhile, whisk the broth, coconut aminos, coconut sugar, rice vinegar, sesame oil, ginger, garlic and arrowroot into a sauce.
- Pour the sauce over the pan and cook 3–4 minutes until thickened.
- Serve over rice with green onion, and sesame seeds and sriracha if you like.
