Tofu Bhurji
Crumbled firm tofu scrambled with onion, tomato, green chilli and warm Indian spices in a little ghee — a high-protein twist on egg bhurji.

Ingredients
- 200 g firm tofu, crumbled
- ½ onion, finely chopped
- ½ tomato, finely chopped
- ½ green chilli, finely chopped
- ½ tbsp ghee
- ½ tsp cumin seeds
- ¼ tsp turmeric powder
- ¼ tsp cumin powder
- ¼ tsp coriander powder
- ¼ tsp garam masala
- ¼ tsp red chilli powder
- 1 pinch salt
- 1 tbsp fresh coriander leaves
Steps
- Heat the ghee in a pan over medium heat, add the cumin seeds and let them splutter.
- Add the onion and green chilli and sauté until the onion is translucent, then stir in the turmeric.
- Add the tomato and salt and cook until soft and mushy, then mix in the chilli powder, cumin powder and coriander powder for a minute.
- Add the crumbled tofu and stir until coated in the spices; cook a few more minutes until heated through.
- Stir in the garam masala, garnish with coriander and serve hot with chapati, paratha or bread.
