Veg Kolhapuri Sabji
A fiery, coconut-and-spice-laden Maharashtrian mixed vegetable curry bursting with Kolhapuri flavors.

Ingredients
- 90 g mixed vegetables (cauliflower, carrot, beans)
- 40 g potato, cubed
- 30 g paneer, cubed
- 2 tbsp oil
- 40 g onion, chopped
- 45 g tomato puree
- 1 tbsp Kolhapuri masala
- 2 tbsp grated coconut
- 1 tsp ginger garlic paste
- ¼ tsp turmeric powder
- 1 tsp red chili powder
- Salt to taste
- 2 tbsp coriander leaves, chopped
- 60 ml water
Steps
- Heat oil in a pan and saute onions until golden brown.
- Add ginger garlic paste and cook until fragrant.
- Stir in grated coconut and Kolhapuri masala, roasting until aromatic.
- Add tomato puree, turmeric, and chili powder, cooking until oil separates.
- Add mixed vegetables and potato, mix well to coat with masala.
- Pour in water, cover, and simmer until vegetables are tender.
- Add paneer cubes and salt, simmer for 2-3 minutes.
- Garnish with coriander leaves and serve hot with roti or rice.
