Beef and Broccoli
Takeout-style velvety beef and crisp broccoli in a glossy soy-oyster sauce, done in under 30 minutes.

Ingredients
- 150 g flank steak
- 150 g broccoli
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 1 tsp cornstarch
- 1 tsp brown sugar
- 1 clove garlic
- 5 g ginger
- 1 tbsp vegetable oil
Steps
- Slice the beef thinly against the grain.
- Toss it with half the soy sauce and the cornstarch; let it sit 10 minutes.
- Blanch the broccoli in boiling water for 1 minute and drain.
- Stir the remaining soy sauce, oyster sauce, sesame oil and brown sugar into a sauce.
- Sear the beef in the vegetable oil over high heat 1-2 minutes per side until just browned.
- Add the garlic and ginger and stir for 30 seconds.
- Return the broccoli, pour in the sauce and toss for 1 minute until everything is glossy and coated.
