Meal-Prep Poke Bowls
Rice bowls loaded with tofu, edamame, avocado and crunchy fresh veg under a creamy sriracha-soy sauce — a cheap, fresh meal prep.

Ingredients
- 105 g cooked white rice
- 40 g extra firm tofu
- 25 g cooked edamame
- 10 g red onion
- 25 g cucumber
- 20 g bell pepper
- 10 g carrot
- 10 g radish
- 30 g red cabbage
- 35 g avocado
- 1 green onion
- ½ tsp toasted sesame seeds
- 13 g mayo
- 2 tsp soy sauce
- ½ tbsp sriracha
- ⅓ tsp sesame oil
- 1 pinch minced garlic
- 1 pinch minced ginger
Steps
- Cook the rice and prepare the tofu.
- Slice the onion, cucumber, pepper, carrot, radish and cabbage; slice the avocado.
- Mix the mayo, soy sauce, sriracha, sesame oil, garlic and ginger into the sauce.
- Layer rice in a bowl, add the toppings, then finish with sauce, green onion and sesame seeds.
